Turkey Meatballs with Roasted Veg & Lemon-Dill Yogurt Sauce
Serves: 2
Time: 30–35 minutes
Turkey Meatballs
Ingredients:
1 lb ground turkey (93% or 99% lean)
1 egg
1/4 cup breadcrumbs (or almond flour for lighter)
2 garlic cloves, minced
1 tsp onion powder
1 tsp dried oregano
1 tbsp fresh parsley (optional)
Salt & pepper
Olive oil spray
Instructions:
Preheat oven to 400°F (204°C).
Mix all meatball ingredients in a bowl.
Roll into small meatballs (about 14–16).
Place on a parchment-lined sheet.
Spray lightly with olive oil.
Bake 15–18 minutes until golden and cooked through.
Roasted Veggies
Ingredients:
1 large sweet potato OR baby potatoes, diced
1 cup broccoli or broccolini
1 tbsp olive oil
Salt, pepper
Optional: paprika or garlic powder
Instructions:
On a separate tray, toss veggies with olive oil + seasonings.
Roast at 400°F for 22–28 minutes, until crisp outside & soft inside.
(Tip: Put the veggies in first for 10 minutes, then add the meatballs so it all finishes together.)
Lemon-Dill Yogurt Sauce
Ingredients:
1/2 cup Greek yogurt
Juice of 1/2 lemon
1–2 tsp dill (fresh or dried)
1 small garlic clove grated (or garlic powder)
Salt + pepper
Tiny drizzle of olive oil (optional)
Instructions:
Mix everything together in a small bowl.
Adjust lemon/salt depending on your taste.
To Serve:
Plate roasted veggies
Top with warm turkey meatballs
Drizzle with yogurt sauce
Add extra dill or lemon if you want it fresh and bright
