Green Glow Gut Bowl

A vibrant, anti-inflammatory, fiber-rich bowl to soothe and support digestion.

What’s special about it:

Ingredients (serves 2)

Base:

  • 1 cup cooked quinoa (cooled)

  • 1 cup chopped steamed zucchini

  • 1/2 cup shredded red cabbage

  • 1/2 avocado, sliced

  • 1/2 cup sauerkraut or kimchi (for probiotics)

  • Handful of fresh mint or basil

Protein:

  • 1 cup cooked lentils (or 1/2 block tempeh or tofu, pan-seared)

Dressing:

  • 2 tbsp extra virgin olive oil

  • Juice of 1/2 lemon

  • 1 tsp apple cider vinegar (with the mother)

  • 1/2 tsp Dijon mustard

  • Pinch of ground cumin + sea salt to taste

Topping (optional):

  • 1 tbsp hemp seeds

  • Crushed toasted almonds or walnuts

  • A dollop of coconut yogurt

Directions

  1. Steam zucchini lightly and let cool slightly.

  2. Assemble your bowl: layer quinoa, cabbage, zucchini, lentils, avocado, and sauerkraut.

  3. Whisk together all dressing ingredients until creamy. Drizzle generously over the bowl.

  4. Top it off with herbs, seeds, and coconut yogurt.

  5. Enjoy mindfully great for lunch post-Pilates or a light dinner.
