Healthy Coconut Macaroons
Ingredients:
1 cup shredded coconut
1/3 cup sweetened condensed milk
1/2 tsp vanilla extract
Pinch of salt
Optional but recommended:
1 egg white (for structure + fluffier texture)
1–2 tbsp almond flour (makes them less sticky, more “bakery-style”)
Instructions:
Preheat oven to 325°F (165°C)
In a bowl, mix:
coconut
condensed milk
vanilla
salt
If using egg white:
Whisk it separately until slightly frothy (not stiff peaks)
Fold it into the mixture
Let mixture sit for 5 minutes (helps coconut absorb everything)
Scoop into small mounds on a lined baking sheet
(use your hands or a spoon—pack them tight so they don’t fall apart)Bake for 15–18 minutes until tops are golden
