Healthy Coconut Macaroons

Ingredients:

  • 1 cup shredded coconut

  • 1/3 cup sweetened condensed milk

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Optional but recommended:

    • 1 egg white (for structure + fluffier texture)

    • 1–2 tbsp almond flour (makes them less sticky, more “bakery-style”)

Instructions:

  1. Preheat oven to 325°F (165°C)

  2. In a bowl, mix:

    • coconut

    • condensed milk

    • vanilla

    • salt

  3. If using egg white:

    • Whisk it separately until slightly frothy (not stiff peaks)

    • Fold it into the mixture

  4. Let mixture sit for 5 minutes (helps coconut absorb everything)

  5. Scoop into small mounds on a lined baking sheet
    (use your hands or a spoon—pack them tight so they don’t fall apart)

  6. Bake for 15–18 minutes until tops are golden
