Healthy-ish banana bread
I made this banana bread when I realized my bananas were about to go bad….omg!! so yummy!!
Ingredients
3 ripe bananas, mashed
2 eggs
2–3 tbsp honey (even a small amount works)
1/3 cup melted butter or oil
1 tsp vanilla (optional)
1½ cups flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon (optional)
Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
Mash the bananas in a bowl.
Mix in eggs, honey, melted butter, and vanilla.
In another bowl combine flour, baking soda, salt, and cinnamon.
Fold dry ingredients into the banana mixture until just combined.
Pour into loaf pan.
Bake 50–60 minutes until a toothpick comes out clean.
