Healthy Detox Cabbage Soup

Ingredients

  • 1 tbsp olive oil

  • 1 yellow onion, chopped

  • 3 garlic cloves, minced

  • 4 cups green cabbage, chopped

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 zucchini, chopped

  • 1 can diced tomatoes

  • 6 cups vegetable or chicken broth

  • Salt + pepper

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • Optional: red pepper flakes, spinach, parsley, lemon juice

Instructions

1. Sauté

In a large pot, heat olive oil over medium heat.
Cook onion, garlic, carrots, and celery for 5–7 minutes until softened.

2. Add Everything Else

Add:

  • Cabbage

  • Zucchini

  • Tomatoes

  • Broth

  • Seasonings

Bring to a boil, then reduce to simmer.

3. Simmer

Cook for 25–35 minutes until vegetables are soft and flavorful.

4. Finish

Add spinach or parsley at the end if using.
Squeeze fresh lemon juice on top before serving for a fresh, clean taste.
